Twenty Seven

Ok, so I figured since it's 2012, my resolution is to be a better blogger. 2012 is going to be a crazy year so I thought that writing about it could be really fun! It only took me a couple of weeks to figure out my new years resolution, but hey, better late than never! I usually start out the new years by saying my resolution will be to say nice things and watch my tongue, but that never lasts very long... I'm too much of a smart ass to follow through with that!

The new year always starts out for me with my birthday. I always tell my mom I wish she could've planned me a little better and had me during the summer so that I could get presents during the summer. Having a January birthday usually doesn't bring me much because it's after Christmas. But as I get older, birthdays really don't matter all that much as they used to. I use to get excited about getting older! When I turned 16, I got my drivers liscense and a car....not sure about 17.....when I turned 18 I could vote and I met the hunter (kyle)...19 and 20 were some pretty awesome college years...turning 21 was a memorable experience (we wont go into detail)...22, I got engaged to the hunter and married him...23,24,25, and 26 flew by so fast I can barely remember them. And here we are at 27...Lord help me, I'm getting closer to 30!!! Not quite sure what to think of you yet 27, but I sure feel a heck of a lot older!

Anyways...

I love to cook...when I have the time....and when it's not volleyball or softball season. So that leaves the offseason, the summer, and the weekends for me to test out cool recipes.

I made these bad boys for dinner last night...


They are Chicken Enchiladas with Green Chille Sour Cream Sauce...seriously these are the bomb. And super easy to make too....made plenty of leftovers! Got this recipe off my favorite website...Pinterest! Here's the recipe link: White Chicken Enchiladas

Chicken Enchiladas with Green Chille Sour Cream Sauce
10 soft taco shells
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chillies

1. Preheat oven to 350 degrees. Grease a 9x13 pan
2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
4. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
5. Pour over enchiladas and top with remaining cheese.
6. Bake 22 min and then under high broil for 3 min to brown the cheese.

I never really follow recipe directions because I always add my own stuff as I cook it. I added extra cheese, and made a little extra sauce because it is so good. Also, I totally didn't broil anything...I cooked them for 30 minutes at 350...I just took them out with 10 minutes left and then added cheese so it wouldn't burn! I'm pretty sure I didn't eat all day so I could have these for dinner! Enjoy!
